Roll cut or roll-cutting, this thechnique
is used for long vegetables like carrot, zucchini, Chinese cucumber
and alike. Roll Wedge cut make attractive chunks and with more
exposed sufrace of the vegetable.
How to roll cut, you need a cutting board and a Chinese cleaver.
Holding the cleaver perpendicular to the cutting boardand cut
stright down on a diagonal. Roll the vegetable a 1/4 turn, and
cut stright down again in a diagonal angle. Repeat cutting this
way until finish.
Roll cut vegetable can be used for stir-fried, stew and braise.
Bigger chunk take longer time to cook.
