Century Egg peserved.
This are preserved duck, my mum told me that it soak in horse
urine that why it have an ammonia smell but actually it was,
the shell is coated with rice husk mix with powered lime and
salt cure for several months.
Peel off shell, then quarter or chop the eggs, which have a
translucent black albumen and greenish or grayish yolk.
The taste, you must have a strong will to stomach it. It have
ammonia smell, but eating with pickle ginger will mask off the
ammonia. Some people hate and love it!
Used for cold dish, rice porridge, stir-fried and steam. Sliced
and eaten with pickle ginger.
Store in dry cool place can last for months.
