Fried Spiced Chicken Recipes:

definitely a finger licking good Fried Spiced Chicken recipes!

21/2 lb chicken
salt to taste
1 heaped teaspoon cumin, ground
2 heaped teaspoons coriander, ground
1 heaped teaspoon turmeric powder
2-3 teaspoons chili powder
3 teaspoons sugar
5 cm (2 inch) piece fresh ginger, shredded
2 tablespoons lemon juice or tamarind water oil for deep-frying
Some lettuce leaves
Clean chicken, chop into fairly large pieces
and pat dry. Sprinkle generously with salt. Mix all remaining
seasonings into a paste and rub well into the chicken pieces.
Allow to stand for 45 minutes to absorb the flavors.
Heat oil in a wok and when almost at smoking
point carefully lower the chicken pieces into the oil. Turn
heat down slightly. Fry chicken until cooked through and well
crisped on the surface.
Remove from oil with a strainer and drain thoroughly
on absorbent paper.
Serve on a bed of lettuce and garnish with freshly fried potato
-Drumlets or wings is a good choice.
- Add more chili power if you like spicy.
